This duel-purpose tool is used to hand-cut tuna loins into slabs or steaks of a precise thickness.
Spacers are arranged to cut tuna slabs in 7 different thicknesses, ranging from ¼ inch (0.64 cm) to 1 3/4 inch (4.4 cm) in ¼ inch increments. The slabs of precise thickness can then be processed into saku or poke. The unit serves as a guide to further cut tuna slabs into saku or poke cubes.
